Creating a delicious, 100% Cabernet Sauvignon in Canada can be a challenge. Late springs, cool summers or early autumn frosts can cut short a season just enough so that Cabernet Sauvignon doesn’t reach peak ripeness. Maverick only produces Cabernet Sauvignon in those perfect vintages when the grape expresses the year deliciously in the glass – balanced, luxurious, and darn tasty.

TASTING NOTES:
This Cabernet Sauvignon has a lovely deep ruby colour and aromas of dark, ripe black fruit mingled with a whisper of violets. The palate is powerful with flavours of cassis, dried figs and ripe fresh blackberries. You will detect sweet oak and hints of caramel. The tannins and finish are luxurious.

WINEMAKING NOTES:
From our desert vineyard in Osoyoos, the fruit was hand harvested and whisked off to the winery right away to preserve freshness. The grapes were then destemmed but not crushed, and fermented in small open top bins. Fermentation happened naturally and slowly, and the wine was punched down twice a day over several weeks before being pressed off. The wine was transferred to 50% new French & Hungarian oak and aged for 18 months. The wine required no filtration and was only lightly sulphured at bottling.

WINEMAKER’S COMMENTS:
2021 was a vintage of extremes. The spring started off cool with intermittent rain, with average bud burst and bloom. Mid-June brought the “heat dome”, with more than two weeks of temperatures over 35C, topping out at 47C. This caused the vineyard to shut down to protect from the heat. 30+C days continued through July and August, exceeding the historical average for the South Okanagan. August brought smoke cover with wildfires raging for the latter half of the month. Maverick started harvest on September 1st with ripe Sauvignon Blanc and rushed to the final line with the last of the Bordeaux reds harvested in mid-October. The 2021 vintage is showing to make powerful wines with great acidity.

Vinification – hand-picked, destemmed and fermented in open top fermentor, aged for 18 months in 50% new and 50% neutral French oak barriques, bottled unfiltered.
