2022 Carbonic Syrah

Quite a bit lighter in colour this year as we continue to improve and work on mastering the technique of carbonic maceration. We’re continuing to dial down the extraction on this wine and it spends less and less time on skins compared to the first rendition in 2020. As a result, we have a marked improvement in the carbonic aroma profile in which the fruity notes of the wine become far more confected, almost reminiscent of “Big Chew” bubble gum. Showing my age with that one.

What I do love about this wine is that it still shows that spicy Okanagan Syrah typicity. Quintessential spice of sage, cardamom, and tapenade on nose and palate, however, we do see a bit more grip this year, which I suspect is from the vintage which ended up being rather warm during harvest. The wine finishes with a delicate fizz which helps the wine retain freshness as well as helps in preserving this zero additive wine. Nothing but grapes here.
